It would be irresponsible to come to Tulum and not eat as much fresh-out-of-the-ocean seafood as humanly possible. Using the transitive property, then, it would be irresponsible to come to Tulum and not eat at Simple as often as possible. The math checks out—and so does the food. Owner Richy Zapata knows that the best fish is the fish least-messed-with (hence his restaurant’s name), so the top draw is the whole-grilled catch of the day served with nothing more than a simple sauce and a few peak-season vegetables. But don’t let that keep you from the ceviche trio or the stellar fish tacos. When the product is this fresh there are no wrong moves. (Drinking tequila in the moonlight beneath a thatched palapa doesn’t hurt the vibes either.)
